Can I take payments if I do not have an LLC or EIN yet?

Every payment provider asks for business identity information when you sign up, such as your entity type and EIN, or you can operate under your personal name as a sole proprietor. Stripe can be set up as a sole proprietor without a legal entity.

An EIN can usually be obtained quickly on the official IRS website, often within minutes, but that site is only open during certain hours.

You do not have to wait to get started: do the rest of your setup in Votel first, and connect your payment provider when your business details are ready. Stripe is required for SaaS plan billing; invoices and other products can use other gateways under Settings, then Integrations, then Other Integrations, then Payments.
