How do I let a client or teammate edit a website I built?

If the person is a client outside your company, share the project with them.

If the person is on your team, add them as a team user and give them a role, for example a role that can only view.

If you give a sub-account access to the AI assistant, they can request their own website edits through it. To automate website creation, workflows have a Create website step that has the AI build the site.
